Mais um workshop para saber mais sobre o bacalhau!

Falar de bacalhau é falar de Ílhavo. É falar da identidade de um povo. Das raízes e das suas gentes. De cultura e de histórias, que se entrecruzam e confundem. Mas falar, hoje, de bacalhau é, também, falar de tecnologia e de inovação É falar de uma realidade social, económica e cultural pungente que, ancorada na tradição ancestral, se constrói, expande e projeta a partir da tradição, do progresso tecnológico e do conhecimento científico.

Desenvolvido pela UNAVE-Associação para a Formação Profissional e Investigação da Universidade de Aveiro (em resposta a um desafio da Câmara Municipal de Ílhavo), o ciclo Bacalhau Com Saberes (*) prossegue na próxima quarta-feira, 28 de março, com um workshop dedicado à demolha.

Quais são as boas práticas e que segredos encerra uma boa demolha. A demolha tradicional e os novos processos. Redução tempo de demolha, otimização de processos, poupança energética, etc… são questões que vamos explorar, colocando em confronto, num ambiente descontraído, o saber científico (produzido na Universidade) e o saber de experiência feito (próprio do mundo empresarial).

O workshop terá lugar no navio museu Santo André, na Gafanha da Nazaré, a partir das 18h30, contando com intervenções de Jorge Saraiva, professor, investigador e diretor da licenciatura em Biotecnologia da Universidade de Aveiro, e Guedes Vaz, diretor industrial da empresa Rui Costa e Sousa & Irmão.

Para 9 de abril, anuncia-se já um terceiro workshop, desta vez dedicado à secagem do bacalhau:

“Secagem: do ar livre para o frio” | 9 Abril | 18h30
Local: Empresa Bacalhau do Barents (Gafanha da Nazaré)

Conteúdos: Os novos processos, o frio, redução do tempo de seca, poupança energética, etc… Cura tradicional/cura amarela.

Intervenientes: Fernando Neto, professor do Departamento de Engenharia Mecânica (UA) e António Ribau, administrador da empresa Bacalhau do Barents.
